I could have sworn I posted this before, but couldn't find it, or any other recipe, so I came up with my own. It's great with tortilla chips, french bread, or just as a side dish. Even confirmed spinach haters love this dish!

Cook 1 package frozen spinach according to directions and drain. Saute 1/2 onion (diced) in a little oil and add a clove or two of minced garlic. This would be the time to add in some chopped artichoke hearts, mushrooms, black olives, or whatever other veggies.

Nuke an 8 ounce package of cream cheese in the microwave for 30-60 seconds, depending on your microwave's power. Add in 1 cup mayo and 1 cup shredded monzarella, and 1 teaspoon garlic salt. Mix in with the veggies and spoon into a greased casserole dish.
Top with 1/2 cup shredded monzarella.

Bake at 350 for 45 minutes.
