Giant Ravioli ... with PICS!

I was making some homemade egg noodles Easy Egg Noodles for Shrimp Alfredo and ended up with some leftover dough.

As I was rolling it out I thought about making tortellinis but then it hit me...Ravioli!!

So I made a quick filling and took some pics. The rest is history....ayes....

Use the recipe above for the dough. It is the BEST and turns out some tender pasta!

Filling: 1/2 pound ground beef
2 tablespoons minced onion
1 tablespoon minced garlic
1/2 teaspoon garlic salt
1/4 teaspoon pepper
assorted italian herbs (optional: oregano, basil, parsley)
2 tablespoons parmesan cheese
1 egg

Brown ground beef. Add onion, garlic and seasonings. Turn off and mix in cheese and egg.

Marinara or Spaghetti Sauce

Cut in half and roll each ball into an approximately 8" x 16" squarish piece. One can be the top and one can be the bottom. If you run out of room, you can just do one at a time and fold in half. (that's what I did)


Lightly score the dough into 3-4" squares.


Moisten along the lines and the outside so the top will adhere.


Place a tablespoon (or more) of filling in each square, leaving 1/2"-1" of space between each.


Moisten along lines again and place the top (or fold over) on the raviolis. Starting in the middle, press down and seal along score lines. Be sure to push extra air out of the "pillows" before sealing completely. Make sure each score line is sealed securely.



Cut apart and make sure edges are well sealed.

Drop carefully into boiling salted water. Turn down the heat slightly cuz they should be just barely boiling and not rolling around trying to pop open. I just had one open up...but it still tasted good.



Top with marinara or spaghetti sauce. Makes 16 giant raviolis or more little ones.

Have you ever tried breading your raviolis and then frying them? MMmmmmm... they call them toasted raviolis in IL and they are absolutley DECADENT!! You just dip them in marinara and eat em! I want some right now in fact! Thanks for the recipe!!!
