Indian Taco Toppings

Well, I never know what to estimate for toppings.

We served 50 Indian Tacos last night and went through the following toppings. I should mention that it was a self-serve buffet set up.

1 Gallon size can Kuner's Chili Beans
10 pounds ground beef
2 big heads lettuce
2 tomatoes chopped
5 - 2 cup packages of shredded cheese
3 cups hot salsa
2 cups mild salsa

Used just under 10 pounds of flour and 1/2 gallon of oil in 2 pans.

I way over estimated the lettuce and tomatoes (these were high school boys we were feeding) and I have 4 heads of lettuce leftover (all shredded) and 6 diced tomatoes left too.

Gonna have salad all week.

I just have to post this as it's my online-cookbook where I keep track of stuff.

Thanks for sharing. It is always hard to estimate for larger quantities. Just figures about the lettuce and tomato.
It's not like you could even freeze them.
Hope you discover some new salad recipes.
I made some fry bread with white flour and a little corn meal and even littler whole wheat flour added. I think it was pretty good. I even tried baking a few in the oven as an experiment (trying to find a healthier version).
The experiment was edible but well just not so good.
It must be lunch time all I can think about is food.

As a variation to the hamburger meat
I buy those bags of frozen chicken breasts

I grill them on my forman grill when they are done, shred them with a fork add some water to make them moist and some taco seasoning to taste
Yumm they are the bomb
Rest is the same

As for the Oil
I have been trying different oils but Canola seems to be the best balance between taste and nutritional value...

some people roll their flour mixture in oil before frying...not very nutritional I know but still way too delicious lol...I know most young ones don't like the toppings all they want is meat n cheese lol..no sourcream or onions or olives??

I like the shredded chicken idea. Do you put some kind of sauce on it? We often make taco's with refried beans instead of hamburger.
Before I corrupted him my husband used to be vegetarian.
I have to be honest I often use the beans are from a can but if you mix in a can of black beans and your own seasoning it is pretty good. Of course it would be better if I just soaked beans from a bag overnight yada yada. Sometimes I do. Sometimes I don't.

I used to use refried beans..at home I do but for sale its canned red kidney beans..taco seasoning..oh yeah and if the frybread runs out..then small bags of doritos for walkin tacos lol

The key is to shred the chicken with a fork not chunks but shreds of chicken then I wet the chicken and sprinkle taco seasoning on it and toss at the same time you want the meat to be coated and moist with the water that way it will stay were you put it
I also use garlic in my chicken
Course I use garlic on everything

I forgot to buy so chicken oh well. Something to try next week.
I have a good recipe for Taco Soup from my grandmother.
Probably came from a magazine but it is a good crock pot recipe.
Of course the whole thing is faster in a pot on the stove.
Brown in skillet:
1lb ground beef (I use ground turkey)
1 medium onion chopped
Add:
1-15 oz. pinto beans rinsed
1-15.0z. lima beans rinsed
1-15 oz. red kidney beans rinsed
3-14 oz. can stewed tomatoes
taco seasoning (1/4 to 1/2 a packet seems good)
1 packet of dry ranch dressing
6 cups water(you have to adjust this according to size of your pot)
1 tsp pepper
3-4 oz. mild chilies (might want to save till end or add to bowls)
Cook
In Crock pot on high 3 hours on low 6 hours.
In pot on stove 30 minutes.
Serve with torilla chips and grated cheese.
Yumm!

would you please explain roll in flour mixture part? I wanna try it but Im not understanding lol

It is cold and rainy here in the north east. So no one has any soup recipes to share. My Mom makes a nice spring time soup but it calls
for new potatoes and peas and baby onions. Sure you could make it now but it would be better in the spring.
Anyway all out of ideas here. Probably a blessing.

umm ok when you get a surface ready for your dough? then you put some oil on it..so instead of using flour you roll it in oil I really dk what it does but it sure tastes delicious...
