Beer Soup Bookmark and Share

It's 20 below and I feel like having beer soup!

1/2 cup Onion, Chopped
2 tablespoons Margarine Or Butter
12 ounces Beer
1/2 cup Carrot, Finely Chopped
1/2 cup Celery, Finely Chopped
2 cups Chicken Broth
1 teaspoon Salt
1 teaspoon Cumin, Ground
1/4 teaspoon Nutmeg, Ground
1 dash Cloves, Ground
1 dash Pepper
1 cup Dairy Sour Cream
1 cup Cheese

Cook and stir onion in margarine in 2-quart saucepan until tender. Stir in beer, carrot and celery. Heat to boiling; reduce heat. Cover and simmer 10 minutes.

Stir in remaining ingredients except sour cream and cheese. Heat to boiling; reduce heat. Cover and simmer for 30 minutes. Remove from heat; stir in sour cream and cheese.

I think I might use heavy cream instead of sour cream.

This had me going WTF before I read down. I guess alcohol gets evaporated when it cooks?

Well that's what they say. In reality, not all the alcohol does...even with other spirits in other dishes.

So needless to say, this isn't for those on the wagon! Sorry!!

I'm actually cooking lots of recipes with beer now to get rid of what's left over after this weekend....beer pancakes, beer battered shrimp...don't need those cans sitting around being a temptation.
