cake mix cookie

Cake mix makes the best and quickest cookie!

1 box cake mix - any variety - yellow cake does very well
1 cup oatmeal
1/2 cup oil
2 eggs slightly beaten
1 cup chocolate chips...peanut butter chips etc
1 tsp extract...vanilla, chocolate, hazelnut, raspberry etc
optional:
raisins, nuts, coconut, toffee, mini M&M's etc

Preheat oven to 350
in a large bowl combine all ingredients, blending well.
If mixture is too stiff, add a little water, if too wet add more oatmeal.
Drop by spoonfuls onto ungreased cookie sheet.
Bake @ 350 8 to 10 minutes.
These freeze well too!

My girls' auntie made cookies from a cake mix and rolled them out and frosted them with pink frosting and sprinkles...just like the ones in the store. But of course hers were bigger and better!

Then she moved before I could get the recipe from her.

use a cookie scoop - the one that looks like a miniture ice cream scoop w/ a lever and bake on parchment paper. These cookies will turn out exactly like the San Francisco Cookie Maker (pilsbury cookie store)

Really? I made them Monday night for my sister's bakesale and I burned them all to heck. I ended having to pull out some brownie bites for her instead...and i almost burned those too. My mind is just not into the game right now.

The first batch was great, but the second got a little overdone, but my husband likes cookies a little done so we are good here. I think the problem was that the batter warmed up and the butter thinned. Next time I will put it in the fridge between batches. Sorry you had to change gears and do something else.
