the best banana bread

INGREDIENTS
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
1 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

I'll have to try this one. I have one from my great-grandma that is pretty good, but hers uses granulated sugar instead of brown. I'll bet the brown sugar spices it up a bit.

brown sugar will add more calories and is sweeter. It's basically molasses and refined sugar...unless it's refined brown sugar. Sugar always challenges my epicurious training. I have to think *ouch*

Now, if you can make me like grits, that'll really be something!!

Once again, I was scarred for life by bad food. Living in Wyoming, noone ever sees a grit around here. But I was given a packet of Instant Grits and talk about TERRIBLE!!!

I love hominy, but I haven't touched a bite of grits since.

First time I saw grits, I put milk and sugar in 'em. Thought it was Cream of Wheat. When I lived in the southeast, I learned to eat grits and eggs.

grits are good sweet or salty. I like to fix them with eggs and milk gravy. Especially good when I don't have enough potatoes.

Sorry, I didn't mean to be rolling my eyes at you...just at myself.

I didn't realize that grits could be made either way...not sure which way I'd like to eat them...if at all...

Kinda isolated here in Wyoming....I have to admit I haven't ever seen bannock...related to some Bannocks....

I have eaten skillet bread which I assume is similar. And when they make oven bread around here it's usually the yeasty kind.
