Velveeta Cheese Fudge

Velveeta Cheese Fudge

1 pound Margarine or Butter
4 pounds Powdered Sugar (or use a sugar substitute)
1 pound Velveeta Cheese
2 cups Nuts, chopped
1 cup Cocoa
2 teaspoons Vanilla

Melt margarine and cheese together. Mix in remaining ingredients. Spread in greased pan. Cool. Cut in squares. Keep in refrigerator. Makes enough for a big party.

it takes a lot of sugar, but so does any other fudge that uses marshmallow or sweetened condensed milk. So the cheese makes up for the milk and the powdered sugar makes this really sweet. Unless you have really hightened taste buds, the cheese is unidentifyable. The vanilla, however is very prominent.

Thought for a while that I'd screwed up making it. Now I can make more.

this was good fudge. We used milk chocolate pieces and semi sweet b/c that's all the chocolate we had. We ran out of the hershey's cocoa making hot chocolate!

Man this stuff is GOOD!! I had to limit myself to just lick the spoon and bowl. Then I cut my 1/4 batch up into 9 pieces and I'll have one (big) piece a day for a total of 4 carbs each.

Even with adding Splenda (20 carbs from 20 packets), 12 carbs for 1/4 # Velveeta and 4 carbs for 1/4 cup cocoa, this adds up to 36 carbs for 1/4 batch.

So I'm going to have to dig deep and find some will power to keep from eating the whole thing!

With the addition of Splenda QuickPacks I'm down to 2 carbs per piece instead of 4!!
