Salmon Patties

Baked salmon was on our Thanksgiving table also! Easy as pie, just wash a whole salmon (gutted) and put it on a pan. Place in oven for one hour at 350 degrees.

Now we find ourselves with a little extra salmon and I got nixed on the idea of salmon chowder.

Salmon patties got the nod, and they're super easy too.

If using fresh salmon, break up cooked salmon and get rid of any bones. If using canned salmon, drain, break up the salmon and smash the bones with your fingers and mix them in. I usually discard the skin, but if you like it, go ahead and use it.

For every cup of salmon, add 1 egg, a teaspoon of seasoned salt, and 2 Tablespoons of finely diced onion. Mix well and form patties.

You can coat them with egg wash and bread crumbs, or just leave as is. Bake at 400 for 20 minutes, or fry in a skillet if you're in a hurry.

I like them served with Miracle Whip, but tartar sauce would be just as good.

I gotta question short stuff. How you keep em from falling apart ? I try to make em and they end up falling apart in the skillet. I won't use all the 4 letter words I said,but for some reason mine crumble apart. I know,I come kidnap you so you can show me what I doing wrong.

I'm sure the beaten egg is what helps them hold their shape. You can put bread crumbs in if you want.

I been using 2 eggs and a cup of crumbled crackers. Think I cut back to 1 egg and bread.

Salmon chowder is a good seafood dish for people that don't like fish. Hot with a blob of sour cream and a fresh baguette.

I think I'll make that too! I've been making all kinds of cream soup since I figured out how.

Gonna have cream of tomato at lunch time, since it will only take about 5 minutes to cook. But I still have some salmon and think I'll chowder it.

easy salmon chowder is take your salmon leftovers and add it to some canned potato soup. The potato soup should be made with heavy cream. Add some dill then serve hot with a dallop of sour cream

My mom made Salmon patties last week. We drove an hour plus New Year's Day to go and eat them. Definitely one of my favorites and I don't make htem - tried once and it didn't work out well.....LOL

I make salmon patties for my Mom, she loves them!
recipe is almost the same, I add a dash of Old Bay Seasoning and make a Tarragon white gravy to go with.
mmmmmm mmmmmmm good!

lemon dill sauce

lemon dill sauce goes really well with salmon patties


5 tablespoons fresh lemon juice, divided
3/4 teaspoon dried dill weed
3/4 teaspoon lemon pepper
10 tablespoons butter, divided
1 shallot, minced
1 tablespoon white wine vinegar
5 tablespoons white wine, divided
1/2 cup heavy cream
1/2 cup milk
1/2 teaspoon dill weed
1 teaspoon parsley
1 teaspoon dried thyme
salt and white pepper to taste

Heat 2 tablespoons butter in a saucepan over medium heat, and saute shallot 2 minutes, until tender. Mix in lemon juice, vinegar, and 1/4 cup wine. Simmer until reduced by at least 1/2. Stir in cream and milk. Season with dill, parsley, thyme, salt, and white pepper. Cook and stir until thickened. Whisk in 1/4 cup butter.
