Favorite Summer Recipes

Anybody got any hot weather favorites?

I love grilled cheese and tomato sammiches! butter, bread, 1 slice of cheese, 1 thin slice of fresh tomato, a bit of fresh basil, another slice of cheese, bread, butter - in that order.

Grilled on low heat until the cheese is all melted... a little salt on top and a bowl of 'frigerator pickles... big glass of sweet tea. Oh man!

So what tastes good to you when it's too hot to cook?

I have a dessert favorite that we used to make growing up in the desert (Phx, AZ).

You take one of those Betty Croker or Duncan Hines cake mixes (preferably white or yellow cake) and prepare as directed. Pour into a 9 x 13 rectangular cake pan and bake according to directions. When the cake is done, before it has fully cooled, poke holes into the cake repeatedly using a fork, leaving somewhere in the neighborhood of 1/2" between the rows of punctures. Then, prepare a 3 oz. box of Jello-O gelatin according to instructions. We used to use cherry or strawberry. Once the Jello-O powder has fully dissolved, pour the hot gelatin evenly over the cake. Then, put the cake into the fridge for several hours or overnight until fully chilled. Serve with Cool-Whip or real whipped cream topping...

That sounds delicious and reminded me of my Pistachio Cake recipe... I'll have to dig it out and post it :-)

Favorite summer foods...hmmm...

Tomato sammiches (tomato, toasted bread, cheese, mayo, s&p)

squash and onions (cut up squash, roughly chopped onions, salt and pepper, 1 cup water--steam squash until soft and onions tender. Drain water. Wisk together 3 tbs evoo and Bragg's aminos. Drizzle over squash. Mix to coat. Let sit 5 min to allow flavor to develop. Serve.)

BLT- (obvious! Bacon, lettuce, and tomato on whole grain bread)

Salads...any kind of salads. The fresher, the better.

Gaucamole and chips

I love this cake. I like to make it at Christmas time too!

my roommate is from the south and she likes everything fried (green tomatoes and summer squash). We also have gallons of sweet tea in the fridge and watermelon everything.
