Wild Rice Pilaf (Crockpot)
If you are lucky enough to live where you can get REAL wild rice this dish is excellent. If you have to buy the stuff they sell in the grocery store as wild rice (it's not even close to what you can get off rez in the Great Lakes area!!) this is still a goot recipe - and easy too!
Dip the corner of a piece of paper towel in some olive oil and rub the sides and bottom of the crockpot crock so that it has a light coating of oil. Rinse 1 1/2 C uncooked wild rice and drain well. Put the rice in the croclpot together with 1/2 cup finely chopped green onion, 1/2 tsp salt, 1 14 oz. can of chicken broth chicken and 2 cups water and mix well with a spoon. Cover crockpot and cook on high for 3-4 hours. Add on 4 oz can of mushrooms (drained) and 1/2 teaspoon dried thyme leaves and stir gently. (Do not overstir rice - it will get gummy!) Cover and cook on low for an additional 1/2 - 1 hour or until rice is tender. |
