Spoonbread

Mmmmm.... I haven't had spoonbread for so long. But I found this recipe and I think I'll make it tonight.


2 cups milk
2/3 cup cornmeal
1 tablespoon butter
2 eggs, well beaten
1/2 teaspoon salt
2 teaspoons baking powder



Stir cornmeal into milk, let come to a boil, stirring constantly. Add other ingredients. Pour into a buttered casserole. Bake at 325F for 45- 50 minutes, until slightly browned on top. Serve hot from casserole.

My Mother used to make this all the time when I was growing up and we used to top it with black-eyed peas. Soooooooo good! Thanks for reminding me. I will have to make it too.

To make spoon burgers, do you just add hamburger & cheese somehow????Tell me how that's done.....better yet juss make me some. I'll even drive over & pick it up when it's done. PLEEEEEEASE.

FF, this is more like a cross between cornbread and dessert. Great next to a slice of ham or whatever.

For spoonburgers, I think you'd mix your cooked hamburger and cheese and whatever else (onions, green peppers, tomatoes) then top it with a crust like biscuit or cornbread.

Anybody else have ideas for spoonburgers? Or can make a pan for Furiously Fancy??

I'm gonna' try it some time this week....it'll be my first time, and I'm in Sacramento though. Doubt he wants to drive that far!
