Taquitos
We made enchiladas with corn tortillas today and I made taquitos with what was left.
1 pounds ground beef 2 tablespoons minced onion 1 tablespoon minced garlic 2 tablespoons chili powder Optional : minced jalapenos, red pepper 1/2 - 1 cup shredded cheese 12 corn tortillas Oil Crumble and brown the ground beef. Cover with water and cook on medium about 20 minutes, add minced veggiesand seasonings, and cook with a little more water for another 10-15 minutes. Turn off and mix in cheese. Heat oil and dip tortillas in hot oil, not so long that they get crispy. Stack on paper towels to drain. Place about a 1/4 cup of filling on each tortilla and roll tightly. Place seam side down on a baking sheet. Bake for 20 minutes at 400 degrees or until crispy. Serve with salsa, cheese sauce, guacamole, or sour cream. Can substitute shredded beef or chicken for the meat. Can fry in hot oil as well - first let cool seam side down. |
