Easy Egg Noodles

I was always scared to make egg noodles after a couple near disasters.

But I found this easy recipe:

2 cups flour
Mix in 1/2 teaspoon salt

In a bowl beat 2 eggs, 1/3 cup water and 1 teaspoon oil.

Make a well in the flour and pour in. Mix well. Knead for 8 - 10 minutes. I just put the dough hook on and let my mixer do the work.

Cut in half with a sharp knife and roll out very thin - 1/8 - 1/16th inch thick. Cover and let rest for 20 minutes. Then cut into thin strips and boil in salted water for just a few minutes. Add them one at a time, and when they're all floating, they're done.

I chopped mine into short pieces and added them to my chicken alfredo.

i'm going to make these today, the recipe is simple enough i should be able to make them...lol

I had not thought of Alfredo sause! sounds yummy. I love home made noodles, Imnot good at cutting them out nice and pretty, my sons always say they look like different things like animals and such kinda makes for good table talk lol

Oh that is a good idea!

I forgot to mention that to cut them out, I rolled it up (made sure it had a little covering of flour), then cut it up at about 1/2 inch and unrolled the noodles. I think I'll cut them 3/8" next time.

Or make the little shapes! Those would be so cool in soup!

My kids eat alot better if they can see shapes in things lol like pancakes they like the different shapes and I can get more in em cause for me to make another shape they have to eat the one they have

We had the noodles cut in strips for dinner tonight (in chicken broth wif chicken an' onions an' garlic an' peas) .... yummy!!
