Quick Hot and sour soup
I needed a quick lunch (and wanted something hot) so I whipped up a hot and soup (Chinese restaurant style).
Boil one can beef broth (or any other broth) with 1/2 can water. Add 2 tablespoons soy sauce (or less), 2 tablespoon vinegar, 2 teaspoons sugar (or sweetener), some garlic (powder or minced), some ginger (powdered or minced), and some crushed red pepper flakes to taste. I sprinkled in just enough to almost cover the top, about a teaspoon. Add in about a cup to cup and a half of frozen stir fry veggies. Bring back to a boil and simmer for about 5-10 minutes until tender. You could add in any kind of veggies. I almost put in a bunch of canned stuff and that would have needed no time at all to simmer. Add some protein. I put in about 3 ounces of frozen baby shrimp. Any kind of cooked left over meat would do - just dice it up. Cubed tofu would be good as well. Now for the thickening. I'm eating low carb, so I opted for a beaten egg stirred in - egg drop soup style. You could mix a couple teaspoons of corn starch with some water, stir it in and bring back to a boil. Or just eat it as is. |
