Blender Salsa
This works best with a hand blender, but just take it easy with a regular blender and it will be good.
Basic salsa 1 small can jalapenos, seeded if you want less heat 1/4 cup chopped onion 1 larger can of tomatoes, I think it's like 26 ounces. Optional: green chilies, canned or fresh fresh jalapenos cilantro lime juice fresh tomatoes Cut the jalapenos into chunks, place in blender or bowl along with onion. Strain the liquid from the tomatoes and add. Blend for just a little bit. Add in canned tomatoes and blend just until chunky. VOILA!! You can skip the jalapenos and use canned green chilies for a very mild salsa. If using fresh chilies, cut into chunks and blend by themselves with the tomato liquid until they're diced. If you're using cilantro, you'll need to mince it up by hand as the blender doesn't seem to puree it much. Easy as pie and so much more economical than store bought salsa. |
