Quick Friday Night Dinner

Yup, my turn to cook tonight again. Everyone has been busy doing pre-holiday things and we got a cold rain falling.

Good night for..... Hamburger Pie !

Preheat oven to 375

Brown 1 1/2 lbs hamburger. When it's about half done add one large chopped onion. Cook until the hamburger is completely browned (like the outside of a burger, not tanned and crumbly but CHUNKS of cooked meat). Drain the fat off the meat and onions.

Add 1 packet of powdered Aus Jus mix (or 4 packets from Beef Ramen or 3 cubes of beef bullion, crushed) to the skillet and stir the powder into the meat until the meat is well coated. Add a large can of mushrooms WITH the juice. Bring the pan juices to a boil and cook for 2-3 minutes, stirring occassionally.

Take 2 - 9" deep dish pie pans and put a large (29 oz) can of mixed vegetables (drain the juice first - I save it to use later for making soup stock) into each pie pan. Dump half the hamburger mixture in each pan. Mix the burger and veggies together with a spoon and smooth the filling into a flat layer.

Make 3 cups of your favorite mashed potatoes** and cover the top of each "pie" with mashed spuds.

** We boil up about 5 lbs of potatoes (in the skin) at a time and keep them in the fridge - so mashed potatoes is simply a matter of peeling and slicing the already cooked potatoes into chunks, adding milk, butter and other stuff (seasonings like garlic, parsley, parmesan cheese and/or oregano/basil/thyme/rosemary - all depends on what I'm using the potatoes for) and microwaving until it's hot and then mashing everything together.

Sprinkle the top of each pie with 1/4 C. grated cheese.

Bake 45 minutes or until the cheese starts to brown.
