Beefy-cotti
Man, did I ever come up with a good one tonight. My turn to cook - thinking all day that sheepherder's pie would be a good thing. Go to start dinner - durn it: outta potatoes.
So here's what I came up with - Mad Budgie's Original Beefy-cotti Brown 2 pounds of hamburger and set aside to cool. Cook one 8 oz package of manicotti noodles according to package directions. Mix the cooled ground burger with 3/4 C. Creamy Ranch Dressing, 2 C. shredded cheddar cheese, 1/2 C. Parmesan cheese, 1 1/2 tsp onion powder, 3/4 tsp pizza spice, 1 T. minced garlic. Stuff the manicotti shells. Put enough red spaghetti sauce in the bottom of a 13"x9" sheet cake pan to cover (about 3/4 C.). Lay the filled manicotti on top of the sauce, spoon enough sauce over each manicotti to cover the pasta (another 1 1/4 C. sauce). Bake in a preheated 350 deg oven for 45 minutes. Serve with additional parmesan cheese. Fed 3 hungry people with enough left over for 3 lunches. |
