No Bake Rum Balls

You can make this recipe the "easy" way or the hard way. The hard way is about 200% better, but time is sometimes the name of the game during the holidays and this is one the kids can help some with.

1 lb. vanilla wafers (if you wanna do this the hard way see the recipe below for making your own vanilla wafers) - ground into a coarse "meal"

1 c. powdered sugar
2 t. cocoa powder
1 c. nuts (I use pecans - any nut or pieces of dried fruit can be used)
1/2 c. light corn syrup
1/4 c. rum (or you can use bourbon if you prefer)

Grinding the vanilla wafers takes time if you don't have a food processor or blender. When kidlet was little we'd put the wafers in a plastic bag, seal it, stick the bag between the layer of a folded towel, give her the meat tenderizer mallet and let her go to town on it! This was generally enough to keep her amused while other baking was going on, too.

Mix all of the ingrediants together. Wet your hands and make the "dough" into little balls. Roll the balls in some additional powdered sugar. Let them stand for a while and then roll them in the powdered sugar again. DO NOT BAKE. Store in a covered container. Separate the layers with wax paper or cover each layer with 1/4 " powdered sugar. These only get better the longer they are stored!!

Vanilla Wafers

1/4 c. vegetable shortening
1/4 c. stick margarine
OR
1/2 c. real butter
1/2 c. all-purpose flour
3/4 c. sugar
1 egg
1 tsp. vanilla
1/8th tsp baking soda

Preheat the oven to 375 deg.

Cream the butter (or shortening and margarine together). Beat the rest of the ingrediants into the butter until completely combined. Stir in an ADDITIONAL 1/2 c. flour completely.

On an ungreased cookie sheet drop teaspoonfuls of dough several inches apart (these will spread while cooking). Bake 8-10 minutes or until the top is no longer glossy and the bottom of the cookies are a golden color. Let the coolie sheet stand for a minute before removing the cookies to cool on a cookie rack.

When they are all the way cool, crumble them up and use them in place of the 1 lb. of vanilla wafers above. Kids love crumbling the cookies too!

They are also really good if you substitute kaluha for the rum and chocolate syrup for the corn syrup. It's even better if you make the "vanilla wafers" for this variation with almond extract instead of vanilla and then use crushed almonds in the "kaluha" balls.

Another variation I tried is using coconut and dried pineapple instead of nuts and coca-ribe (coconut flavored rum) instead of rum.

I made some during the holidays and they are delicious. I also made a rum cake.
