Anything I can make that is this good and I don't have to worry about over-cooking is all right by me.

Preheat oven to 375 degrees.

2 egg whites
1/2 t. cream of tartar
3/4 c. sugar
1/8th t. salt (a "pinch")
6-10 drops green food coloring (enough to suit you although red is fun too)
6 oz pkg semi-sweet mint chocolate morsels (I've chopped up 6 oz of Andes thin mints before and they worked OK too)

Beat the egg whites, cream of tartar, salt and food coloring until stiff peaks form. Carefully fold in the mint chocolate.

Drop by teaspoonfuls onto an ungreased cookie sheet.

Turn the oven off. Put the cookies in the oven and go to bed - they'll be done in the morning.

humm i was rembering when all i needed was some pesadent

but if i ever get married again i think i will step it up a noch and try those mints.
