Sweet potato casserole

My mom makes the best sweet potato casserole. It's light and fluffy and DEElishish!! No marshmallows, sorry.

3 cups mashed sweet potatoes (peel, cut in about 3 pieces and boil until soft)

1 cup sugar
2 beaten eggs
1/2 cup milk
1 teaspoon vanilla
dash salt
1/3 cup butter

Beat together until smooth. Pour in 2 qt. buttered baking dish.

Topping:
1 cup brown sugar, 1/3 cup flour, 1/2 cup butter. Optional: 1 cup chopped nuts.

Spread topping over and bake at 350 for 30 - 40 minutes.

mmmmmmmmm that sounds great! Most recipes I see call for OJ and marshmallows - which I don't care for in sweet potatoes. Mostly I just make 'em like mashed potatoes. I'll have to try this one next week.

this is an awesome recipe! I have a similiar recipe. I use brown sugar instead of gran sugar and sweet condensed milk rather than whole milk, double the amount of vanilla, 1/4 tsp of cin, nutmeg & cloves (or just use 1 of pumpkin spice). I'm not the marshmallow type either - well, at least not on my sweet potatoes.

Household food allergies rule out the pumpkin spice and the alternative of cinnamon/nutmeg/cloves. Food allergies are also one of the reasons we rarely go out for the US traditional thanksgiving day fare.

The brown sugar and sweetened condensed milk sound good though.

Marshmallows are just weird on a vegetable.... they belong in hot chocolate!

This year my mom put the brown sugar in with the sweet potatoes and used raw sugar for the topping. Took me awhile to figure out what was different, but it was very good.

My East Texas Mammaw used to bake whole sweet potatoes and let us have them to eat in the afternoons with just a little butter.
Man, they were so good!!
I still cook them like that everyonce in awhile.
My uncle made some sweet potatos this Thanksgiving similar to the recipe posted. He used that Brown Sugar Splenda in it.........it was SO GOOD!!!

Stop it, you guys are making me hungry! Nothin' like sweet potato anything, in my book.
But you're right....marshmallows are just bad in sweet potatoes. Yech! We always had them with the marshmallows growing up, and I wrongly thought the problem was the sweet potatoes! Hee hee!

I make a dish that my crew likes, its mashed sweet potato's with a brown sugar topping on it and I add pecons in the topping any bodys interested let me know and ill post the reciepe.
