Ramen Salads
Veggie Salad I
In a bowl toss together: 1 large diced tomato 1 large diced onion 1/2 C. halved olives (black or green) 1 packet Ramen noodles only (cooked, cooled and rinsed - don't use the seasoning) Dressing: 1/3 C. White Vinegar 1/3 C. Vegetable Oil 1/3 C. Sugar Veggie Salad II 1 packet Ramen noodles only (cooked, cooled and rinsed - don't use the seasoning) 1 can early peas, drained 1 diced medium onion Stir in enough Miracle Whip or mayo to moisten (1/3 - 1/2 C.) Salt and pepper to taste Both salads are best made 24 hours in advance. It's one of those things like chili or soup - the longer you wait the better it gets! Both recipes are from the wonderful lady who lives with us and does the half of the cooking that I don't. |

Thai Chicken Ramen with Peanut Sauce
2 packs of chicken flavor ramen noodles
1/2 cup of shredded already-cooked or leftover chicken 1 grated carrot, 1/2 cucumber, peeled, seeds removed, and sliced thinly Spicy Thai peanut sauce (see recipe below) Cook ramen noddles according to package, using only 1 packet of seasoning in cooking water. Drain and toss with other ingredients, adding peanut sauce until evenly coated, but not runny. Chill slightly or serve at room temperature. Peanut Sauce Mix together well: 1/4 c. peanut butter 1/4 c. water 1 tbsp. soy sauce 2 tsp. brown sugar 1 tbsp. vegetable oil 1 or 2 cloves garlic, minced 1/4 tsp. crushed red pepper |

Southwestern Chicken Ramen
1 packet of chicken Ramen
1/4 tsp minced garlic (fresh or the stuff in the industrial sized jar) 1 tsp garlic powder 1/2 tsp onion powder 1 tsp oregano/basil (optional) White con queso cheese sauce (tostitos brand is good) Some ranch dressing/sauce Cook the ramen normally (with flavor packet), but with the minced garlic in the water. Add a half of the garlic powder while it’s still boiling. When the noodles are done, remove from the heat and add the chicken flavoring packet. Stir thoroughly. Add the remaining garlic powder, the onion powder, the oregano/basil and stir well. Once the herbs are incorporated completely, drain the excess liquid from the noodles, and add a small amount of the Queso dip and the ranch dressing. Stir until the noodles have absorbed the flavor (they’ll look a bit thicker and creamy). Season with red pepper or add cheese if desired. |

Bacon Ramen
1 packet of Oriental style noodles
4 Slices of Bacon chopped A Few Chopped Green Onions (optional) 1 Dash of worcestershire Sauce Fry up the bacon, and then drain, reserving 1 or 2 tablespoons of bacon grease. Add the seasoning packet to the bacon grease, cook stirring for a couple of minutes. In a separate pan, prepare the noodles according to the directions. When the noodles are done stir in the bacon and the pan seasonings. Let sit for a couple of minutes until everything is hot. Top with a few green onions and a dash of worcestershire. |

Mock Cordon Bleu Ramen
One package chicken flavor ramen
One or two, slices ham (or a packet of the 90 cent a package wafer thin stuff in the lunch meat section, or even spam will work) Shredded swiss, or cheddar, or both (however much you want) Prepare ramen as package indicates. While the ramen cooks, dice up the meat into small pieces, and shred cheese. Drain ramen, mix in ham, and top with cheese. |

Ramen alfredo:
Boil 2 cups of water, pour in half a package of frozen brocolli florets, or broccoli/carrot/cauliflower blend. Boil about 5 minutes then add it the block of ramen - pushing it under the veggies- for a minute. Take out about 1/2 cup of the water and mix with a packet of alredo sauce mix. Pour back in the pan and simmer another minute. Add in some diced cooked chicken. Top with monzarella. |

Beef lo mein:
Cook a pack of beef ramen and drain. Save the beef broth packet. Cut a little beef in small thin strips and saute on medium high heat in a little oil along with some thinly sliced celery. Add in some thinly slice onion and minced garlic after beef is done. When the onion is translucent add in the noodles and fry along with the mixture. Mix the beef packet with 1 teaspoon of cornstarch, 1 teaspoon soy sauce, and 1/3 cup water. Move everything in the pan to the side and pour in the liquid mixture. Let it come to a boil and mix in with everything else. Cook for just about a minute longer and serve. |

I had to eat ramen for 3 months when I did an DC internship back in 1987. I avoid eating it when I can. It brings back some bad memories and makes me gag a little.

Sounds like my little brother. When he was in college, he would buy 2 cases of ramen and that was his food for the month. Now he avoids it like the plague.As for me, when I'm REALLY hungry, or needing some comfort food and a little short on chicken soup - chicken ramen HITS THE SPOT!! |

Staple when we were poor(when i was a kid)....3 minit noodles over here...no-name usually...once in awhile name brand Mr. Noodles. 'fancy' was with tomato soup(also no-name) and chopped up hot dogs...sometimes maybe a handful of frozen veggies thrown in.....anyhoo...now i still buy them cus my kids love them....i make theirs with eggs and peas, but they like them plain and raw with the seasoning too
