Cheesy Meatloaf
This is a recipe that I made up and it tastes quite good to my husband and me. It's ordinary meatloaf with a cheesy kick. I can't really tell you exactly how much of each ingredient to add because I just throw things together so you may have to adjust it to your taste preference if you try it.
1 lb. ground beef 1 egg 1 bell pepper (green, yellow, or red, I use green) diced 1 onion (any kind you'd like, I use white) diced 1&1/2 cups of shredded cheese (any kind you'd like, I use a mexican blend) 1 or 2 tbsp. seasoning (any kind you'd like, I use a salt/pepper/garlic blend) Ketchup BBQ sauce (any kind you'd like, I use honey BBQ) Preheat oven to 375o F. In a large bowl (with your hands) mix ground beef, egg, bell pepper, onion, shredded cheese, and seasoning. Place mixture in a small bread pan and flatten to the shape of the pan. Then bake in oven for about 40 minutes or untill beef mixture is almost done but not pink. Mix 1 part ketchup and 1 part BBQ sauce in bowl. Take meatloaf out of oven and spread sauce mixture over the top. Put back in oven and bake for about 10 minutes or until meatloaf is completely done. Drain fat. Let cool for about 3-5 minutes. Eat. |

Meatloaf for a crowd:
3 pounds ground beef (or elk or moose) - break up in a large bowl. 1 Tablespoon salt 1 teaspoon pepper 1 teaspoon garlic powder - sprinkle seasonings over meat. 1 onion - mince fine and spread over meat. 1 cup oatmeal - sprinkle over as well. 1 can tomato sauce - pour in 1 can carrots - put carrots and liquid in blender, puree then pour in 3 eggs - beat then pour in. Mix well, by hand is best. Spread mixture in a 13x9 pan. Cover with topping - Manwich sauce is best. The ketchup/BBQ sauce above sounds good. Ketchup with a little mustard is good too. Just ketchup works as well. Use about a cup. Bake an hour at 350. Good recipe to double/triple for a REAL crowd. And it's good to have extra for leftovers. I love to fry leftover meatloaf the next day. I also saw some people slice it, then dip it in eggs and bread crumbs, and fry it. |
