Bannock

i do have a generic bannock recipe

3 cups flour
1 tablespoon baking powder
1 tsp salt
* mix dry ingredients together, make a well with flour mixture

1 cup water with 1/4 milk or 1 1/4 cup water
1/4 cup vegetable/canola oil
*pour liquid into flour mixture, mix together and then knead

roll out with rolling pin or knead out with hands into a large oval shape (or also can be cut into small bisquit size bannocks) and placed on an ungreased cookie sheet. cook in a 400 celcius degree oven (not sure what it is in farenheit) for about 12 - 15 minutes or until tapped with finger and it sounds hollow.

one of the other chefs I work with called this cowboy bread. He said his mom used to make it for breakfast when he was a kid. I thought that was interesting because it's always been bannock. I love that you can make a little or a lot because the dough keeps well.

The recipe we used was pretty much the same. The only real difference was that we used dry milk so you could pack it and only have to add water. As it was usually something we made when camping, we didn't have an oven. We wrapped it around a stick and put it by the fire.

Thanks Mato, a friend of mine in NC wanted to know how to make it and I haven't been able to nail down some of my Anish friends to get it from them. This helps alot.

I've had bannock and it's good. It will come in hand at my uncle sometimes too.LMAO

Sometimes we would just take a couple boxes of Jiffy biscuit mix.

It's not quite the same, but it worked in a pinch.

I use bacon grease instead of cooking oil. I cook mine on a dry cast iron pan on a stovetop - less than medium heat. Don't matter much though. Only thing......... you can't take an oven with you when cooking outdoors.

The best oven bannock is cooked in an oven on a woodstove. But....... who da heck has a woodstove nowadays?

Maybe it was just better cuz my Mom or Granny cooked it.
