I've seen them done in lazy/lane stitch and have a pattern to basically make a "tennis" ball (2 figure eights) but wonder if its best to bead after its been stuffed and sewn up?

I've never seen one made with figure eights, just with 4 sections like the peel on a quartered orange. Anywho....

I'd advise beading all but the seam allowances before hand. Since the surface is going to be fairly dramatically curved, I'd crowd the stitching a touch. That way when you sew it up and stuff it, there won't be big gaps. Then bead over the seams.
